... but what if you're not of an excellent standard to begin with?!

Excellence is being used in a more general sense here. For example you can hate your job, but still take pride in providing a level of quality that will give you a sense of pride or satisfaction. On a more basic level, it's simply saying your attitude can make or break you. Like if you shovel shit for a living, you can make the piles prettier than anyone elses, LMAO! OK, I think it's time for bed after that in depth thought :)
